This is a blog about Jen, a lifelong vegetarian, who recently transitioned to a vegan diet co-habitating and cooking for an omnivore, Jon, her husband. Jon loves his steak. It's also about Jen's food travel adventures and her hunger to sample unique & healthy vegan meals on-the-go, which can prove to be quite challenging, especially when attending work conferences, in airports, and in certain parts of America.
Jen is an unwavering vegetarian and now vegan who grew up with a vegan father and a vegetarian mother. Around the age of five or six, she decided that chicken nuggets and bologna were no longer for her. To this day, she has never tried a real beef burger, steak, or bacon. And she's never been tempted to try it despite some friends who have tried to influence her.
Growing up vegetarian as a kid is difficult but builds character. She cried many times in school and at summer camp when other kids would make fun of her sandwiches which frequently had "grass" also known as sprouts in them.
Here are some fast facts about Jen:
Favorite meal: macaroni & cheese
Favorite dessert: carrot cake
Favorite drink: chai spiced tea
What makes me smile: successfully cooking a meal and sharing it with friends and family.
