Vegan Wedding cupcakes

I am most grateful that my husband is open to trying vegetarian and vegan foods. When we visit my parents he is forced to eat vegan because my dad is a Vegan. I don't think our relationship could work if Jon wasn't open and willing to try different foods.  

Despite what many people say or think, vegan food is full of flavor. In some instances, I think many people would be surprised to find they are eating vegan food. While Jon & I discussed wedding details, we had to chose who would be our cupcake supplier for the reception. (A traditional cake wasn't our style. Plus, cupcakes are much cooler anyways.)

My dad introduced us to a local bakery, Kristin's Bistro & Bakery in Keene, New Hampshire. It's an ordinary bakery, but my dad having befriended the bakers, encouraged them to try out some vegan recipes. 

We tried their vegan cupcakes and were immediately sold. We tried carrot cake, vanilla, and chocolate flavored cupcakes. They were all amazing, but the carrot cake was an explosion of flavor in your mouth. Moist, fresh, flavorful and filled with chunks of real carrots, raisins, and nuts.

So Jon and I decided to to have vegan cupcakes (chocolate & carrot cake) for our wedding, we just didn't tell any of our guests for fear they wouldn't actually eat them!  

We did tell some of our guests after the wedding, but no one could tell the cupcakes were vegan. Amazing!

The best part about our cupcakes were how they were displayed. My dad came up with the idea for a cupcake tree. Yes, you read that right. Last summer he made a six foot or so tall tree with limbs and small rings for the cupcakes to sit. The cupcake tree was the most creative, amazing creation ever. I know I never saw a cupcake tree in any of the bridal magazines or websites. 

The moral of this post? If you are vegan or vegetarian and have a partner who is an omnivore, don't be afraid to fully embrace your health food choices and don't feel the need to compromise your beliefs.

Moving to a new blog

I've decided that I want to dedicate any "free" time I may have to an entirely new blog space, not one that is on my professional portfolio website. My old blog was here: http://www.jenniferdepaul.com/blog

So here we are: Dinger Dives In

I got married on September 12, 2015 and my new last name is Hemmerdinger. It's quite a mouthful from DePaul, but I'm slowly getting used to it. The blog's title is a creation from my new last name and what I think is my ability to really "dive in" with new vegetarian foods, recipes, and restaurants. 

I hope this blog will be fun, inspiring, and creative for both you and me. :)
