My dad was Vegan decades before it was cool, literally as long as I have been around (30 years). He was Vegan before the documentary Forks Over Knives came out and truly altered the way people thought about their food. He was that "weird" guy eating products that truly tasted like cardboard. Trust me, I know. I grew up a vegetarian from the age of around 5 and sampled hundreds of new vegan and vegetarian products with my Dad.
My Dad has been the primary reason and inspiration behind why I've been an unwavering vegetarian my entire life and now transitioned into Veganism. He has lent me support and showed me that it really is OK to take the path less traveled. He taught me to truly appreciate and love all animals, wild and domesticated.
I wish I could celebrate and bake him a Vegan cake today. Hopefully I'll be closer soon so I can just pop over and whip up something delicious.
